Recipe for Asian Style Soup
4 cups of chicken, turkey, or vegetable stock
2 smashed garlic cloves
2-3 cups of asian greens or cabbage
1/2 inch slice of peeled fresh ginger
1-1/2 Tbls soy sauce
1-1/2 Tbls chinese cooking wine or Saki
2 tsp sugar (or your favorite sweetener)
1/4-1/2 tsp toasted sesame oil
Optional: 1/4 tsp red pepper flakes (or more to taste)
Combine and bring to a boil. Simmer 5-10 minutes.
Prepare any choice of fresh vegetables by slicing on the diagonal
Examples: Celery, carrots, broccoli, cauliflower, bok choi, cabbage
Tokyo bekanna, Yukina savoy, spinach, arugula, turnips, radishes.
Shortly before serving, add the firm vegetables and simmer until fork tender.
Prepare bowls with cleaned, sliced greens including scallions, chives, spinach, arugula, yukina savoy and tokyo bekanna. Pour boil broth with the brassica vegetables on top of the greens and enjoy.
Prepare and add rice noodles or stuffed won-tons as desired.
