Indian Chai Tea

I had the pleasure of meeting a missionary friend of Susan Brumm. She serves in India and gave us this recipe for CHAI tea while we were at a conference in Dallas back in 2014. She tells us that Chai recipes are as diverse as the families who make and serve them. So feel free to experiment and share your discov-eries!
Indian Chai Tea
3 stalks of lemon grass, snipped in small pieces (more or less to taste)
1 quarter size piece of peeled fresh ginger (more or less to taste)
3 heaping teaspoons of ground cardamom (more or less to taste)
2-4 cups strong black tea (equal amounts to milk)
2-4 cups of whole milk (equal amounts to tea)
1/2 cup sugar (more or less to taste)
Combine above ingredients, bring to boil, simmer until reduced to desired consistency. Strain and skim off any surface foam if it forms on the surface before serving hot or over ice.
