Roasting Beets
A great way to enjoy any vegetable is to roast them! Beets and carrots are no exception. You can even throw in those bewildering radishes.
Just peel the beets and carrots and toss lightly with olive oil and salt and set in a preheated 400 degree oven or toaster oven for 20-35 minutes or until fork tender.
Dill Dip
1 tsp Beau Monde seasoning
1 TBL freshly chopped dill
1 TBL freshly chopped parsley
3/4 cup sour cream (substitute low fat if desired)
3/4 cup mayonnaise (substitute blended cottage cheese if desired)
1 TBL minced onion
Combine and chill over night to blend flavors
